French chef Jean-Marc Vergennes has opened his first French restaurant in the UK and he has told the BBC he is keen to make it a success.
In an interview with the BBC, he said he wanted to make a “real French” restaurant that reflected his home country’s cultural identity.
He said: “I would like to have something that is in the way of a typical French restaurant, which is the kind of restaurant that is seen in Paris or New York.”
It would be a French restaurant that was in the same spirit as the French, with a very different attitude towards the world, and the French cuisine is very important to me, I am very fond of French food, so that’s why I am really keen to start.
